Today was Healthy Office Potluck for an extra credit day on the challenge! Those who wanted extra credit points had to submit a recipe or dish to the organizers for approval and then bring it for everyone to share today! Lots of yummy and healthy dishes (even rocky road fudge!); I brought curried quinoa (easy to make and not so hard to bring with me on the bus, especially with my still messed up back) and for breakfast I made a loaf of low-fat no sugar banana blueberry bread. There were soups and salads, pastas, no-potato salad, tofu and desserts! I had a little bit of almost everything...but I think because I drank a bottle of water (which I usually do when I eat a meal) and tried all of the soups, I became really full! I did have seconds on the strawberry shortycakes. Mmmmm!I walked to town to catch the bus home, didn't walk as fast as I usually do but am proud that I made it even though my lower back is still sore.
Went to Costco and it started raining...I guess this rain is part of the remains of Hurricane Felicia. :{
Too lazy to plug in the Bugg today, but I did eat this:
Breakfast:
English Muffin, slice turkey breast, swiss cheese, tomato sauce, choy sum "pizza"
Snack:
Crackers, Apple, dried fruits
Lunch:
Potluck stuff!
Snack:
fiber bread slice, 2 leaves romaine, 2 tbsp chicken salad
slice blueberry/banana bread that I made, a shorty cake
Dinner:
flatout bread, laughing cow cheese wedge, 4 oz. chicken breast, 2 leaves romaine
